Fresh salmon fillets are pan-fried to perfection and served with an oyster sauce. Perfect served over freshly cooked rice and a side of steamed broccoli.

- 2 tablespoons oil
- 2 cloves garlic, crushed
- 4 tablespoons dark brown soft sugar
- 3 spring onions, sliced
- 4 tablespoons oyster sauce
- 250ml water
- 900g salmon fillets
- 1 tablespoon cornflour
- 2 tablespoons warm water

- Heat oil in a medium frying pan over medium heat. Stir in garlic and dark brown soft sugar and cook until garlic is lightly browned. Stir in spring onions and cook until tender. Mix in oyster sauce and water.
- Place salmon fillets into frying pan and reduce heat to medium low. Spoon sauce mixture over fillets. Cook 10 to 15 minutes, until fish is easily flaked with a fork.
- Remove fish from frying pan and set aside. Mix cornflour and warm water into the remaining sauce mixture. Stir until thickened to desired consistency. Pour over salmon to serve.
