A simple lemon sauce made with butter, flour, milk and lemon. It's lightly spiced with cayenne pepper.

- 2 tablespoons butter
- 4 teaspoons all-purpose flour
- 175ml milk
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper

- Melt butter in a saucepan over medium heat. Whisk in the flour and stir until smooth. Gradually stir in milk; bring to a boil over medium heat, stirring constantly. Cook for 2 minutes or until thickened. Remove from heat, and stir in lemon juice, salt, and cayenne pepper.

made this to go with salmon as it looked good, I didnt have nay cayan but added some chilli powder for a kick. The decided to add some french wholgrain mustard made a good sauce not amazing but nice with a rich fish-09 Jul 2012
