Dough preparation:

In a bowl, mix the eggs, sugar, vanilla essence, oil and soft butter. We will mix until the composition is homogeneous.

Separately mix the flour, salt powder and baking powder. We will add them over the composition in the bowl, gradually stirring constantly until they turn into a dough that is easy to shape.

We will take the dough out of the bowl and start kneading it. When the dough is ready we will divide it into equal balls (the size of a walnut).

Meanwhile, preheat the oven to 170 degrees Celsius. Separately in a tray, lined with baking paper we will add the balls at a decent distance from each other.

We will leave the balls to bake until they turn golden. When they are ready, we will take them out of the oven to cool. When they are cold, with the help of a teaspoon we will make a hole in each ball. We will keep these leftovers for cream.

How to prepare cream:

In a saucepan mix the milk, cocoa and sugar. We will mix and put the pan on the stove to boil. When it starts to boil we will set it aside and add over the ground walnuts. We continue to mix until all the ingredients are homogenous. On top of this we will add the leftovers from the balls. Now we will leave the cream to cool.

How to prepare cakes:

We will start by adding the rum essence over the already cooled cream. We will group the hollow balls in pairs and fill them with cream. There will be 2 balls hollowed out and glued together with the cream.

Separately we will dissolve the dye in water. When we finish assembling the cookies, we will soak each one in water with dye (here the choice of color will belong) and we will pass them through sugar. Now the cookies will be left to dry on some napkins for about a day. Because it needs to get a soft and fluffy consistency.

We pass the cookies through the previously colored milk, we pass half of the cookie through red and the other through yellow. Leave to drain, for a short time, on a napkin and then add sugar.

Then we made cakes, one we froze and one we ate for breakfast.

Today we are talking to Rosana Iacomi, the administrator of the "Sweets without sugar" laboratory and, at the same time, the creator of these wonders that you see in pictures and that you can find on Facebook. So, sugar-free sweets? Is it really possible?

Yes, it is possible! Until three years ago, however, I had not thought for a second that there could be good, tasty desserts, full of flavor, that would satisfy your craving for sweets. without sugar. Honestly, I am concerned about the idea of ​​offering my little girls sweets as healthy as possible, without preservatives and enhancers, so I am constantly testing new homemade cake recipes, which will successfully replace those bought at the supermarket. Even so, my little girls ate a lot of sugar at the time.

The click occurred the day I found out that my father has diabetes, a disease I didn't know much about. Suddenly, he had to give up everything that meant dessert, because they all contained sugar, and the alternatives were almost non-existent. And then I started looking for solutions. I first tested recipes in which sugar could be replaced with fructose. The sweets tasted good, but after more consistent documentation, I found that fructose has a fairly high glycemic index and can do almost as much harm as sugar. As artificial sweeteners were excluded from the start, I started searching again.

And that's how I found out about xylitol.

At first I treated him with distrust. I didn't know anything about it, I didn't know how it behaves when boiled, baked, in creams or glazes, so I set to work. The first step - I started using it in the sweets I made for the family. First impression - no one noticed that I replaced the sugar with something else. No weird effects, nothing special.

I started looking for as much information as possible about this sweetener, from different sources, from importers, from distributors, from people who used it frequently. That's how I found out Xylitol is a 100 percent natural sweetener which is extracted from birch bark through a patented technology in the United States. It has a very low glycemic index (7), as much as parsley, which is why it has been approved by all diabetes organizations in Romania. It tastes the same as sugar, behaves exactly like it and, very importantly, does not produce cavities. Hard to believe, I told myself. But, real. After almost 3 years of eating almost only sweets with xylitol, my eldest daughter, aged 7, it has no caries! A rare situation that made the dentist ask me in amazement: "Does your child eat sweets?

Step by step, I tested dozens and dozens of recipes in which I replaced the sugar with xylitol. After children, friends and relatives became the next consumers. Everyone was happy with the taste and appearance of my sweets. Whether it was something classic - Diplomat, Snow White, muffins, peaches or stuffed nuts, or modern sweets with airy mice and special countertops. And how could they not be satisfied if they could enjoy a sugar-free dessert, in which they only found themselves basic ingredients - flour, eggs, butter, fresh fruit, Belgian chocolate or natural whipped cream?

And the sequel came naturally. How the best advertisement is the recommendation made by a satisfied customer, I started to be looked for by different people with diabetes or who were following differently ARRANGEMENTS (Dukan, ketogenic diet, no egg, no gluten).
