A quick and consistent salad, which gives us the opportunity to take advantage of the fresh asparagus found during this period.
- 1 link asparagus (about 250g)
- 3 sausages cabanos (about 200g)
- 1 cup croutons (approx. 100g)
- 50g almonds
- 400g canned beans (mixed or plain)
- 3 tablespoons olive oil
- salt and pepper

RECIPE PREPARATION Asparagus Salad with Sausages and Croutons:
We start by draining the beans. Then wash the asparagus and clean the bottom with the vegetable cleaner, if it is more fibrous. We cut each asparagus stalk into 2-3cm pieces. We also cut the hut. Heat the oil in a wok, or a large pan with a lid. Heat the sausage pieces for 1-2 minutes, then add the asparagus and cook for another 2-3 minutes, without the lid. Throw the croutons and almonds in the wok, cover with a lid and leave for 4-5 minutes on low heat, stirring from time to time. Remove from the heat, add the beans, season with salt and pepper, depending on how spicy the sausages are. The salad can be served hot, but it is just as good and cold.

Preparation Homemade croutons
- Preheat the oven to 180 ° C.
- Remove, optionally, the crust of the bread and cut the core into cubes with the side from 5 & # 8211 6 mm to 1.5 cm. Very small or slightly larger, as you like. Crusts without shell will be identical to those purchased, if you do not mind a more rustic look, you can leave the shell.
- Place the bread cubes in a tray, placing them in an even layer. I usually line the tray with baking paper but it is possible without it, I do it more out of the desire to shorten the cleaning of the tray.
- Add the oil, sprinkling evenly.
- Now also add spices and herbs, if you wish. I put finely chopped garlic and dried thyme.
- Sprinkle with salt and a little pepper.
- Mix for homogenization and rearrange in an even layer.
- Bake in the oven until lightly browned, at least 10 minutes. I mix them in the oven with a wooden spoon to make them even, especially if it's a thicker layer of bread.
- Remove from the oven and can be used immediately, after allowing it to cool slightly.
- Once completely cooled, they can be placed in a container & # 8211 box, jar & # 8211 in which, if tightly closed, they can be stored at room temperature or in the pantry for up to a week.
These homemade croutons are very easy to make and are delicious.

Ingredient: 500 g broccoli, 300 g tuna, 100 g cottage cheese (optional), one egg.
Method of preparation:
- Boil broccoli for 3 minutes in boiling water and then cut into pieces

2. Mushroom salad
Ingredient: 1 kg mushrooms, 1 onion, 5-6 cloves garlic, oil, salt, pepper, dill, boiled eggs (optional), toast
Method of preparation:
- Cut the onion into small pieces and cook in a teaspoon of oil
- add a little water and the mushrooms, cleaned and cut into large pieces, add salt and pepper to taste
- Leave it on the fire until all the juice from the mushrooms decreases
- when they are well penetrated and low, add the garlic and a little dill
- This salad can be served hot or cold, decorated with quarters of boiled eggs, lettuce leaves and toast.
3. Grilled chicken
Ingredient: 4 pieces chicken breast, 1 red bell pepper, 1 yellow bell pepper, 1 eggplant, salt and pepper, oil, basil, vinegar, mustard.
Method of preparation:
- cut the eggplant into slices, sliced chicken, peppers into large pieces
- the vegetables and chicken are passed through salt, pepper and, to taste, other spices and grilled until they penetrate and are golden
- Make skewers alternating eggplant slices, chicken and peppers and serve with a vinaigrette of oil, basil, mustard and a little vinegar.
4. Potato salad
Ingredient: 4 large potatoes, 1 onion, olives, donuts, pickles, tomatoes, boiled eggs, oil, vinegar, mustard, salt, pepper, parsley
Method of preparation:
- Boil the potatoes in their skins, then cut them into large cubes in a bowl
- onion cut into larger slices boil 3-4 minutes in a mixture of oil, vinegar and water, then pour over potatoes
- Add to the salad: slices of tomatoes and donuts with vinegar, pickled cucumbers or even fresh cucumbers, olives, boiled eggs, lettuce leaves, salt, pepper, chili and parsley

5. Cauliflower soup
Ingredient: 1 large cauliflower, 2 potatoes, salt, pepper, oil, 1 tablespoon flour, fresh parsley, wholemeal bread.
Method of preparation:
- Wash the cauliflower, cut into pieces and remove the thick stalks
- Peel the potatoes, cut and boil together with the cauliflower, add salt and pepper and leave on the fire for 20 minutes.
- in a tablespoon of oil add a tablespoon of flour and mix on the fire until it becomes a golden mixture, then add a little soup
- this mixture is added to the large soup pot and left to boil for another 5 minutes
- At the end add green parsley and put in each plate a few croutons of toasted wholemeal bread.
& ndash 300 g fish marinated in vinegar (it also works with smoked or canned fish but to be pieces) & ndash I used marinated anchovies now

How to prepare the recipe for marinated fish salad (with asparagus and green onions)?
Break the asparagus into suitable pieces, without the woody part, put the carrot on the large grater, cut the onion into slices and mix everything well with the well drained fish. Season with pepper and hot pepper and leave to cool for 20 minutes before serving.
You can also add green parsley and / or bell peppers.

Asparagus cream soup with shrimp and bread croutons
Finely chop the onion, then cut the asparagus pieces keeping the buds for the final stage, heat a pan in which we put 50 g of butter and where we harden the onion and the asparagus tails after hardening, add the chicken soup and let it boil for 25-35 min.
Leave the soup to rest for a while then with a vertical mixer or blender (preferably) pass all the contents of the pot, adding it in a thin thread until the desired consistency of the sweet cream is obtained. Match the taste with salt and pepper and add the nutmeg.
In another pan put the remaining butter and previously cleaned shrimp (be careful, not only the crust and tail, but also this intestine being removed more easily on the back) are pulled into the pan over high heat for 4-5 minutes and add the garlic. .
The bread is cut into 2-3 cm cubes and placed on a baking sheet in a tray that is put in the oven heated to 230 degrees for 3-4 min.
Finally, mount the plate, adding for onion and a few onion sprouts (optional).
For decoration, raw or pan-fried asparagus buds and shrimp are used, as well as bread croutons.
Asparagus Salad with Sausages and Croutons - Recipes
Ingredient:
Baby spinach 30 gr
Red chard salad 30 gr
Endive 30 gr
Carrot 20 gr
Cucumber 20 gr
Green onion 20 gr
Red radishes 20 gr
Asparagus 20 gr
Red bell pepper 10 gr
Hazelnuts 10 gr
Fresh mushrooms 20 gr
Cherry tomatoes 15 gr
Yellow cherry tomatoes 15 gr
Salt 3 gr
Ground white pepper 1 gr
Method of preparation:
Carrots, cucumbers, radishes and mushrooms are cut into thin slices.
Place all the ingredients in a bowl, season with salt and pepper.
Serve with Dijon mustard sauce.
Mustard sauce is prepared from: 40 ml olive oil 7 gr Dijon mustard seeds 10 gr honey 7.5 gr balsamic vinegar 20 ml orange juice.

Yes, that's right, although nothing out of the ordinary seems to be from the list of ingredients, it all depends on the way it is cooked, the order of putting the ingredients in the pot, but also the quality of the top quality ingredients.

Spinach cream with mozzarella croutons
- 500 g fresh spinach
- A small onion
- 3-4 cloves of garlic
- 50 ml vegetable oil with neutral taste
- 70 g butter
- 50 g white flour
- 300 ml cooking cream with at least 30% fat
- 2 l of water
- Salt and pepper to taste
Ingredients for breaded mozzarella croutons:
- 300 g mozzarella
- 50 g flour
- 100 g breadcrumbs
- 2 eggs
- Frying oil
Method of preparation:
Peel the onion and garlic and cut them coarsely.
Wash the spinach and drain the excess water.
Put the onion oil, garlic, a little salt in a pot and sauté until soft.
Add the spinach and sauté it until it softens, then add the water and boil for 5 minutes from the moment it starts to boil.
Put the butter and flour in a pan and sauté them for 2-3 minutes over medium heat.
Pour the flour mixture over the spinach and cook for another 5 minutes.
Turn off the heat and add the cream, season with salt and pepper. Then mix until you get a fine and homogeneous cream.
Preparation for mozzarella croutons:
We cut the mozzarella into cubes, we pass it through the flour, we pass it through the egg, then through the breadcrumbs, and through the egg and once again through the breadcrumbs.
Heat a frying pan with oil bath and fry the cubes in hot musai oil to get a crust, otherwise they will break.
